Acorns by Thomas & Fransene Miller

We recently found a delightful treat in acorns falling from a huge wild oak tree in our front yard! Acorns used to be a large part of the Native American's diet. Wild hogs, deer, and turkeys get fat on them. They are high in protein, carbohydrates, fiber, fats, and certain minerals and vitamins. They also have a high level of tannic acid (used to tan leather) which must be leached from them before eating by soaking or boiling. Acorns have traditionally been shelled, ground into meal, leached, and then used as flour or thickener for soups.

We decided to try something different: acorn burgers! At it was a hit at our house. After grinding the leached acorns into a rather course meal, we used the following recipe and served them with ketchup, mayo, and pickles on bread just as you would a hamburger. We also tried using the recipe for meatballs (acornballs) with spaghetti. Again it was delicious.

Here is the recipe:

Boil together for 15 minutes, covered:
3 ½ cups ground acorn meal, leached
2 cups water
4 ts salt
1 ts garlic
Meanwhile, sauté the following:
9 small onions
6 T butter
Last, combine the following and form into patties; fry like hamburgers:
Boiled acorn meal
Sautéed onions
3 cups oats
5 eggs, beaten
